Broccoli sautéed in wine and garlic, Mario Batali
According to Batali, this is one of his favourite recipes. It’s simple, delicious and very healthy. All you need is 1 head of broccoli, 1 orange and 1 lemon (all fresh). Side ingredients include olive oil, garlic, white wine and hot red pepper flakes. Using a sauté pan, heat the oil with the garlic until it begins sizzling. Once it’s sizzling, add the broccoli to the pan and commence adding wine to the pan, as this will keep the garlic from browning. Cook until the broccoli stalks are tender (usually 8-10 minutes), before adding red pepper flakes and the lemon and orange zest.
